Homemade almond milk is very simple to make, is delicious, creamy and tastes so much better than shop bought versions. Muslin squares do the trick perfectly well but you can also buy nut milk bags from health food shops like Planet Organic and Real Foods.
Homemade Almond Milk
200g Raw almonds
1 Litre of water
Agave nectar or maple syrup
1/4 spoon vanilla extract
1 Pinch of Himalayan salt
1 Medjool date (optional)
Soak the almonds in cold water, cover and refrigerate overnight.
Strain then blend the almonds with a litre of water. Add the vanilla extract, salt and a teaspoon of agave or maple syrup, if you prefer a sweeter taste. You could add a medjool date to sweeten instead if you prefer.
Lay a muslin square over a bowl and strain the mixture using the cloth. Squeeze all the liquid out, separating from the almond meal. You can turn the almond meal into granola or add to smoothies or yogurt if you like.
The milk lasts for a couple of days in the fridge and tastes delicious in coffee, Barley Cup, oaty breakfasts and is a calming bedtime drink.
Shopping list: almonds, agave nectar, maple syrup or medjool dates, vanilla extract, Himalayan salt and a muslin square.
