This is an easy, energy boosting, plant based, vegan, sweet and healthy breakfast, snack or dessert.
120g mixed nuts - I used brazil, walnuts, hazelnuts and almonds
9 pitted medjool dates
2 tablespoons coconut oil - I used Fushi's Fractionated Coconut Oil as it's already runny but you can use normal coconut oil too. Just warm gently until liquid.
1 mango diced
Desiccated coconut as a topping
Add the nuts, dates and coconut oil to a food processor or blender (I use a Nutri Ninja at the moment) and blend until it's a nutty, doughy consistency.
Spoon onto plates or ramekins and top with fresh mango and desiccated coconut. You could add vegan ice cream like Vanilla Booja Booja or Coyo coconut yoghurt.
