Snickers (Chocolate And Peanut) Energy Balls
1/2 cup pitted dates, chopped
1/2 cup water, to boil
1 cup crushed, unroasted peanuts, shelled
50 grams good-quality, dairy-free dark chocolate (I recommend using at least 70% cacao)
1 teaspoon vanilla extract
Dried fruit or nuts if desired, to decorate
Place the chopped dates and water in a heavy based saucepan and bring to a gentle simmer over a low heat. Stir continuously, allowing the dates to break up and caramelise. This process should take approximately five to seven minutes - the water should begin to evaporate and the date mixture will form a paste.
Add the chopped chocolate, stirring until this has melted through.
Remove from heat and mash with a potato masher to remove any remaining lumps.
Stir through vanilla extract.
Finally, add the crushed peanuts and fold to combine. If the mixture is too wet, add some more nuts, until you have a mixture that is not damp but not crumbly.
Roll into bite-sized balls and decorate with fruit / nuts if desired.
Allow to set in the fridge for an hour.
