Vegan, Gluten Free Pancake Recipe from Simple Vegan Blog
This recipe is the best I've tried for vegan, gluten free pancakes. I love them. They taste really nice with maple syrup and lemon juice.
Instead of 1 cup of rice flour and 1 cup of oat flour, I used 2 cups of Doves Farm's Gluten Free Flour because I had some in my cupboard and that worked perfectly well.
The bananas replace the egg. I've made banana pancakes before, sometimes without success but this is a really good recipe if you're looking for a gluten free and dairy free pancake recipe.
