This is the easiest lunch to throw together and is packed with healthy goodness, flavour, vitamins, minerals, fibre, antioxidants, healthy fats - the whole shebang.
Simple green salad:
Mixed leaves, spinach leaves, red pepper, garden peas, avocado and tomatoes.
I dressed the salad with 1 part balsamic vinegar to one part Fushi organic avocado oil (you could use extra virgin olive oil too), mixed with a pinch of Himalayan salt and some cracked black pepper.
I first learnt how to make humous when I was working as a cook on a boat, which sailed from Eilat in Israel along the coast of Egypt when I was eighteen, after a spell on a kibbutz!
Nowadays, I usually use Jamie Oliver's recipe for houmous.
Jamie's humous is an absolute cinch to make, so you may never need to buy shop bought again.
The Flax Crackers are a new addition to my shopping trolley. They are made by Raw Health and you can buy them from Holland & Barrett, Ocado, Planet Organic and all good health food shops. These are the organic crispy flax crackers with a hint of chilli and they are made of brown flax seeds, golden flax seeds, sunflower seeds, tomatoes, sea salt and cayenne powder.
