Leon's Kale And Peanut Salad
I spent the afternoon in Brighton yesterday with my daughters and we nipped to Leon for a quick bite to eat after a day of shopping and haircuts. Fun times.
I haven't been to Leon for ages and loved the food, especially given that it's a fast food restuarant. Leon was created because the founders used to love going to fast food restaurants when they were younger but realised that the kind of food they were eating at these places would make people fall asleep and wake up fat!
So they created fast food, that's good food.
Their overall view on nutrition is well summed up by Michael Pollan in his book 'In Defence of Food': "Eat food, not too much, mostly plants". A diet that follows these principles will be a good diet.
The founders want to open a Leon in every major city in the world, which I think would be no bad thing. Their menu is inspired by flavours, variety and natural healthiness of Mediterranean cooking, so you can finally have fast food that's healthy and tasty. They use natural ingredients and favour good fats and good carbs.
They have a good kids menu and this is their Kale And Peanut Salad, which is made up of shredded curly kale, spring greens and crushed peanuts with a tangy tamari and sesame dressing.
