Coconut Porridge With Banana And Almond Butter
I think this might be my favourite porridge recipe to date. It tastes really creamy, coconutty and the right side of sweet for breakfast or as a healthy snack.
50g porridge oats
1/2 can or 200mls coconut milk
125mls almond milk
1 teaspoon almond butter
1 teaspoon maple syrup
Mix all the ingredients together in a pan and bring to simmer on a medium heat, stirring regularly. Then bring down to a low heat and cook for 5 minutes until thick. If the porridge becomes too thick, you can add more almond milk at the end.
Serve into bowls and top with desiccated coconut and sliced banana
