Coconut And Passionfruit Vegan Ice Cream by Hazel & Cacao
I had a few passionfruits in the fridge which I needed to use and stumbled upon this amazing vegan ice cream recipe. So good. Really quick and easy to make. You add all the ingredients to the blender and blend for 1 - 2 minutes, then pour into a loaf tin and freeze for about 4 hours.
Serve with extra passionfruit. This 'ice cream' is dinner party worthy, I think.
You can buy cashew butter from most health food shops. I made my own as it's also really quick and easy to make.
