Organic Edamame & Mung Bean Fettucine With Homemade Pesto
I've written about homemade pesto and mung bean pasta before (or brown rice, buckwheat, millet, quinoa pasta - there are so many varieties of gluten free pasta on the market now) but it’s such a staple and we’re having this easy, healthy and quick supper tonight, so thought that I would remind you of the recipe and different gluten free pastas you can use.
The mung bean pasta is made of edamame and mung beans and cooks in 7 minutes. I bought from Ocado but is available from lots of good health food shops too.
This Jamie Oliver pesto recipe takes minutes to make and tastes so much better than shop bought. I make it without the parmesan cheese, to make it dairy free and add a little extra sea salt to taste.
