Quinoa Porridge With Peach And Goji Berries
Quinoa is a great source of plant based protein and makes for a really nice breakfast porridge.
Peaches are full of nutrients like vitamins A, E, K and some of the Bs and is a good source of minerals like calcium, potassium, magnesium, iron, manganese, phosphorous, zinc and copper. They are fibre rich too, so great for healthy digestion.
Goji berries have been known as a superfood for years and are alleged to be great immune boosters which may help to protect against heart disease and cancer. They are a good source of vitamin C and vitamin A, as well a fibre, antioxidants and iron.
So this breakfast is really nutritious and is easy to make.
350mls Almond milk
1 Peach, cut into bite sized pieces
1 Handful Of Goji Berries
Add the quinoa and milk to a pan and cook over a medium heat, bringing to a simmer. Cook gently for 15 minutes, stirring occasionally.
Add the peaches and goji berries and serve.
This is actually lovely served cold as well.
