Glowing Spiced Lentil Soup by Oh She Glows
I can highly recommend this soup. A delicious meal in a bowl, which is really simple to make and takes about 15 minutes to prepare. Then you just need to cook for 20 mins to 1/2 hour. So tasty.
The turmeric, cumin, cardamom, cinnamon, coconut, garlic, onions, spinach, lime and lentils make for an incredibly nutritious soup with lots of health benefits, including anti inflammatory properties form the turmeric, digestion loving fibre from the lentils and veggies and protective phytonutrients from the spinach.
This is a really hearty, filling soup but you could pair this with a salad and brown rice cakes if you're extra hungry.
My kids prefer a smooth soup, so I've blended some for them.
