Blitz Patisserie is based in Scotland and specialises in making vegan, gluten free, dairy free, raw, beautiful, beautiful cakes. Luda has written about why she created Blitz and her eureka moment on the train from London to Glasgow. She also gives the low down on raw cakes and why we should all be eating them.
A few years ago, I was on the train from London Euston to Glasgow, leaving the roar of the big city behind me and returning home, feeling exhausted to say the least. The strenuous long hours at work, coupled with crazy exercise regimes and constant dieting left me in desperate need for change.
My body was aching, my immune system shattered, my mind was restless and my dreams were broken. Despite achieving everything I thought I wanted, I wasn’t happy.
Looking out of the window, I stared blankly afar. Life outside the train with its buildings, people and fields were all streaming past my eyes just as fast as the last two years I had spent in London. Hypnotised, I was gently rocked to sleep by the silence of the train and woke up at my final destination. I didn’t physically sleep but my mind felt rested.
Arriving at Glasgow, I knew exactly what I wanted to do! Curing my neglected body and mind was my priority.
I decided to change my usual exercise regime to kundalini yoga, started to eat more fruit and veg and swapped achieving targets for another company to becoming self-employed, creating my own healthy juice and raw cake company.
I started making raw cakes as an addition to the juice bar my husband and I now own. I never had any intention of making them for the public at first, to be honest. I discovered raw vegan desserts by sheer accident when I was looking for alternatives to cure my allergies. I was willing to give up sugar, gluten and lactose forever but never desserts! I love cake too much and was prepared to suffer for the rest of my life if I couldn’t find a healthier way. I was in luck. I quickly stumbled across beautiful raw desserts that were free of everything yet looked exquisitely delicious.
Desserts have quickly become my most favourite part of the meal. I was so excited about my discoveries, I was eager to tell everyone I knew. Needless to say, people didn’t believe me at first about the existence of free-from desserts. I felt it was my mission to convince them. I started making raw cakes for my family and friends and they loved them too. Through regular conversations with my clients, I realised how common lactose, gluten and refined sugar allergies are. Most, unlike myself had to give up cheesecakes forever, so I volunteered to make some raw cakes for them too.
My customer’s reactions were very motivating and encouraging. I mean, I was making cheesecakes with a cheap fifteen-pound blender and to be honest, they were sometimes a little dry, rough and grainy but people still loved them. My customers came back to buy more cakes and I was delighted. I felt a responsibility to step up the game and eventually invested money into buying more reliable equipment.
I wanted to replicate all the traditional desserts and flavours that myself and my customer were used to but making healthier alternatives. I had never really baked before in my life, so using nuts and seeds as flour wasn’t a problem. Whipping soaked cashews into a cream was mind blowing.
The health benefits of raw cake were endless, restrained only by lack of imagination and knowledge, so I decided to undertake a course called “Nutrition for Beauty and Youth” to expand the possibilities.
Raw cakes are a combination of all the finest ingredients that nature has to offer. From the freshest and ripe fruits and berries sourced locally to the exotic superfoods, dense with nutrients and microelements, possessing enormous health benefits. I use everything I can: acai berries, spirulina, moringa, matcha green tea, chia, buckwheat - the list is endless. I feelthat raw cake on a plate is like eating a bag of nuts that was shaped and decorated for you, like drinking a morning smoothie rich in fibre and packed with vitamins; like a beauty pill for the hair, nails and skin; a joy for the senses, leaving you with a feeling of complete satisfaction, without the cravings. No after taste of regret and thinking “I shouldn’t have eaten that!”
I believe that raw desserts bring happiness to your health, to your mood, to the environment and to animals.
People say to me all the time, it must be really great to do what you want and to be successful at the same time. These words bring a smile to my face. I know that many people measure success and wealth by the bank balance but to be honest, the ingredients are so expensive, leaving only marginal room for profit, so I am not sure I will ever become financially wealthy by being a raw baker and chef but I love, love, love the process of making raw cakes, so I feel wealthy in other ways!
