Breakfast berry bowls look lovely, are easy to create and full of goodness. They’re basically thick smoothies, with toppings, which you eat from a bowl with a spoon. They're a perfect and delicious start to the day or make for an energising snack.
For this bowl:
2 frozen bananas (I keep a stash of peeled bananas in the freezer)
1 kiwi fruit
1 handful frozen blueberries
1 handful of raspberries
1 small handful pistachio nuts roughly chopped
1 small handful of shredded coconut
100 – 200 mls plant based milk (I use almond or oat)
1 teaspoon acai powder – at the moment, I use Naturya’s Acai Powder
Blend the bananas, 2/3rd of the blueberries, 2/3rd of the raspberries, ½ kiwi and acai powder with the plant based milk until it resembles soft scoop ice cream.
Transfer to a bowl and top with the remaining ingredients – raspberries, blueberries, kiwi, coconut and pistachios.
Acai is a dark purple fruit and looks similar to a grape. They grow in the Amazon rain forests and first became popular in Brazil, when people were claiming that the berries were boosting their energy levels.
Acai are packed with antioxidants, fibre and healthy fats and are known to help protect the heart thanks to the antioxidant anthocyanin, may promote weight loss, healthy digestion, good vision and Brazilians have been eating acai berries for centuries to promote beautiful skin.
