These are so easy to make and are perfect as a breakfast or snack.
400mls coconut milk
10 strawberries and 5 or 6 more diced to use as a topping before serving
1 tablespoon maple syrup
130g chia seeds
Blend the coconut milk, strawberries and maple syrup together for 1 minute. Then add to a bowl and stir in the chia seeds. Decant into glasses or ramekins and leave in the fridge to set for 2 hours.
Top with chopped strawberries to serve.
