The Mindful Chef
I’ve used Mindful Chef a few times over the years and love their delivery service. It's really convenient when I’m feeling time poor, the recipes are creative, they take me out of my cooking comfort zone and they’re super simple to make. Mindful Chef send you healthy ingredients and a recipe to match, so you don’t have to go shopping or plan but you still cook dinner from scratch. All the meals I’ve ever made from Mindful Chef have been really tasty. Not one dud. I order the vegan box and the great thing is that they send a recipe card, so that you can make the meal again. On paper, it seems a more expensive way to eat but you don’t have to go to the supermarket for a few days and somehow, for me, it works out cheaper as I am not putting things in my shopping trolley that I don’t need.
This is their Moroccan Spiced Aubergine Chickpea and Apricot Tagine With Cauli Rice and it was delicious. They have a really good cookbook, which is worth a read and there are lots of recipes on their website too. Recommended.
