Oh She Glows "Adriana's Fave 10 Minute Pasta"
An easy, kid friendly, meat free Monday pasta dish.
Most kids love pasta, mine included. This is a really easy and quick, extra healthy take on pasta and tomato sauce and is dairy free, plant based and gluten free. I've never thought of adding humous to the marinara sauce but it's a welcome addition, making it taste creamy and delicious. I used quinoa pasta, which you can usually pick up from a health food shop. There are so many wheat free pastas to choose from now. Brown rice pasta is also good and my kids don't notice the difference. If you have a fussy eater, it might be an idea to make the tomato and humous sauce, then let the kids add the greenery themselves at the end (I added fresh peas and basil). If you don't have hemp hearts, which are the best and most nutritious part of the hemp seed, try blending whole hemp seeds in a high powered blender before adding. They won't be quite as soft and smooth but still do the trick (again, if you have a fussy eater, this might be too 'bitty' for them, so trial and error required) . What I love about this recipe is that it's so quick and easy and there's not really any need to measure anything, once you know what you're doing. You just make the tomato sauce, add the humous and then add whatever you/your children enjoy.
