Simple Vegetable Soup
My mum makes the best soup but seeing as she lives in Scotland and we're in Sussex, I'm going to have to make it myself! I love soup lunches and they seem to be the easiest way to get more veggies into my kids. This is a classic and ultra quick vegetable soup recipe from BBC Good Food, which takes 10 minutes to prepare and 15mins to make - max. A perfect way to use veggies up from the fridge.
I use vegan Marigold Bouillon stock and Oatly Oat Cream, to substitute creme fraiche, so that this is dairy free and vegan. Such an easy and most basic of soups but delicious nevertheless.
