This salad dressing from Oh She Glows takes minutes to make and is full of healthy goodness - parsley, basil, lemon juice, apple cider vinegar, garlic, avocado and extra virgin olive oil - creamy and totally delicious.
1 clove of garlic
2 the flesh of two small avocados
7 - 8 tablespoons water
5 tablespoons apple cider vinegar
3 - 4 tablespoons lemon juice
1/4 cup of olive oil
1/2 cup of fresh basil leaves
1/2 cup fresh parsley
Combine all the ingredients in a blender or food processor and blend until smooth and creamy.
The green salad is made up of chard, spinach, cucumber, toasted almonds and pumpkin seeds. I also used beetroot 'chioggia' which is a beautiful deep pink skinned, stripy pink and white beetroot which tastes really sweet.
