Coconut No-Bake Cookies By Minimalist Baker
These no bake cookies (mine look more like truffles...) are sublime.
The tastiest sweet treats I've tried for a long time. I've made lots of these for friends over the past few months and they've gone down a storm. Highly recommended. They're made of coconut sugar, almond milk, coconut oil, raw cacao powder, desiccated coconut, rolled oats, almond butter (or peanut butter), vanilla extract and a pinch of sea salt. They taste fudgey and chocolatey - so good. Once you gather up all the ingredients, which if you can't find in the supermarket, you'll find in the health food shop, they are really easy to make.
