I make this soup when I feel like a reset. It's full of goodness, easy to make and is gloriously green. My kids love it too.
1 onion chopped
2 cloves of garlic chopped
2 sticks of celery chopped
350g broccoli chopped
1 carrot chopped
2 handfuls of spinach
1 litre of veg stock (I use Marigold Swiss Vegetable Vegan Bouillon at the moment)
Sweat the onion, garlic, celery, broccoli and carrot in olive or coconut oil on a gentle heat for 15 - 20 minutes to soften them.
Then add the spinach and (hot) stock and cook for a further 5 minutes.
Blend using a handheld blender or high speed blender.
