We have been in touch over the years and they have sent one of their favourite quick and easy recipes over for you to try, so that you can bring a little piece of “Mayr” to your life:
Courgette Spaghetti With Tomato Pesto
1 courgette (medium size)
1 pinch salt
1 tsp. Ghee
1 tsp ghee
3 tbsp. chopped sundried tomato
1 tsp. olive oil
1 tbsp. pine nuts
1 pinch salt
some vegetable bouillon
To make the zoodles you need a spiraliser. Wash and trim the ends of your courgette. Place the courgette between the spiked handle end and the blade, then turn the handle and wonderful ribbons of zoodles will appear. Heat a pan with some ghee (clarified butter) and then add the zoodles and cook gently until they are “al dente”.
For the tomato pesto, put all the ingredients in a blender and blend until smooth. You can add some vegetable bouillon to make it more liquid.
Zoodles can be used as a replacement for pasta and served with any kind of pasta sauce. They fit perfectly for dinner as they are low in carbohydrates
