Chia Seed And Cacao Dessert
Chia Seed pudding is a classic in health food world and is very simple, quick and easy to rustle up. Some are not so keen on the texture (frog spawn…). I love the texture but if you prefer a smoother pudding, you can blend/grind the seeds down first. This is a nutrient rich, creamy and sweet treat and I often keep in the fridge to grab if I’m craving a dessert. Chia seeds are an excellent source of omega 3 fatty acids, are rich in antioxidants and provide fibre, iron and calcium.
60g chia seeds
2 tablespoons maple syrup
1/2 teaspoon vanilla extract
A pinch of Celtic, Maldon or Himalayan Salt (all rich in minerals)
1 teaspoon of raw cacao powder
400mls almond milk (I am going through a Rude Health phase at the moment as I haven’t had the time to make my own)
Add the chia seeds, maple syrup, vanilla extract, salt and raw cacao to a bowl and whisk the ingredients together. Add the almond milk and stir through thoroughly before pouring into ramekins or glasses. Leave these in the fridge overnight or for at least 5 hours, then serve. These can be stored in the fridge for up to 5 days.
