Golden Porridge

This warming bowl is a turmeric latte version of porridge and is filling, comforting and delicious.

Serves 1

Ingredients:

1/2 teaspoon coconut oil

1/2 teaspoon turmeric

1/2 teaspoon cardamom or 2 pressed cardamom pods

1/4 teaspoon cinnamon

1/4 teaspoon nutmeg

60g rolled oats

250mls of water or 125mls water and 125mls of almond milk

1 teaspoon of maple syrup

Method:

Warm the coconut oil gently on a low heat for a minute, then add the turmeric, cardamom, cinnamon and nutmeg. Heat gently for another minute, then add the oats. Coat the oats in the mixture and cook for 1/2 a minute before adding the liquid. Cook on a medium heat for 10 - 15 minutes until the porridge is ready. 

Add the maple syrup and stir through.

I topped with chopped almonds, sliced fig and banana.
